Fresh Ricotta
Looking for a delicious, no-fuss recipe to prepare this week? Fresh ricotta made with cow or goat’s milk is a simple & fun recipe.
Recipe Instructions
➜ Slowly heat 1/2 gallon of cow or goat’s milk on the stovetop to 165°F – 190°F. Do not boil.
➜ Turn off the heat and add 1/4 cup of lemon juice or vinegar. Gently stir as the curds separate from the whey.
➜ Strain the curds (milk solids) using a fine mesh strainer or cheese cloth to your desired consistency.
➜ Add salt to taste and finish with fresh herbs such as dill, chives, or parsley.
