When late summer brings us an abundance of eggplants, we make baba ganoush! 🤩 Try your hand at this simple, nourishing, and flavor-filled dip using our farm-fresh eggplants. 🍆

Grill the eggplants whole until the outside is charred and the inside has softened, or cut them in half to bake until soft (removing seeds and adding olive oil are optional), at 425°F for about 40 minutes. When cooled, simply remove the skin or scoop out the flesh. Drain the juices in a colander, using the back of a spoon to press out the liquid.

Place it in a food processor and add tahini, olive oil, salt, pepper, garlic, and lemon juice, mixing to taste. Enjoy with your favorite flatbread, crackers, or snacking veggies. To elevate this dip even more, you can top it with fresh parsley, red pepper flakes or smoked paprika, toasted pine nuts, and a drizzle of olive oil. 🤤

There really is nothing like the consistency and flavor of these delectable treats from heritage breeds . . . we bring out the connoisseurs!
